5 sweet potatoes sliced into 1/4 inch long slices and 1/4 inch wide

Preheat oven to 450 degrees.
Line a tray with parchment or spray thoroughly with cooking spray. In a large bowl, toss sweet potatoes with just enough oil to coat. Bake until sweet potatoes are tender and golden brown, turning occaisionally, about 20 minutes.
