Breakfast Pizza

PIzza Crust. (I use a whole wheat pizza crust that I make from scratch)
4 eggs
milk
1 cup cheese
cooked bacon or sausage crumbled
1 cup hashbrowns

Sprinkle hashbrowns on the pizza crust, In a bowl whisk eggs with a splash of milk. Pour over hashbrowns. Top with cheese and sprinkle crumbled bacon or sausage over the cheese. Bake for about 20 minutes or until eggs are set and crust is cooked.


Using my pizza crust....and one serving of sausage 1/8th of the pizza was 5 WW points.

Pumpkin Bars

1 cup whole wheat flour
1 tsp baking powder
1/4 cup cocoa powder
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
1/2 cup pumpkin puree
1/4 cup firmly packed brown sugar
1 egg
2 egg whites
1 tbs canola oil
1/2 cup mini chocolate chips

Preheat oven to 350 degrees. Coat an 8 inch pan with non-stick spray. Pour into prepared pan. Bake 18-20 minutes.

Makes 8
2 points per square

breakfast casserole

1/4 cup margarine
1/2 cup croutons
1/2 cup shredded cheddar cheese
4 eggs
3/4 cup milk
1 tsp dry mustard

Melt margarine in the bottom of an 8x8 pan. Add croutons and mix to coat. Sprinkle cheese on top of croutons. In a separate bowl, whisk the eggs milk and mustard. Pour over croutons and cheese. Cover and refridgerate overnight.

Bake at 375 for 40 minutes or until eggs are set. Let stand 5 minutes before serving. Can be frozen and microwaved to reheat.

Serves 4
Each serving 4 points.

Snickers Pie

1/2 Gallon Fat free/sugar free (the lowest cal/fat you can find) vanilla ice cream
1 cup fat free/lite cool whip
1/4 cup peanut butter
1 box of instant chocolate pudding
3 ounce of grape nut cereal

Mix all together well.....put in 9 inch pie pan and freeze.

Salmon Wrap

Serves 2

1 large flour tortilla (tomato flavored would be best)
2 ounces non fat cream cheese
2 tsp capers, rinsed, drained and chopped
4 slices smoked salmon
1 tsp chopped parsley

Heat broiler; spray a baking sheet with non stick cooking spray. Place the tortilla on the baking sheet; broil until blistered and softened, about 15 seconds on each side.

In a small bowl, mix the cream cheese and capers; spread over the tortilla. Top with salmon and parsley. Roll into a cylinder and cut on the diagonal into about 4 slices.

Serving size; 1/2 of cylinder.

Deep Dish Pizza Quiche

4 ounce cream cheese, softened
4 large eggs
1/3 cup heavy cream
1/4 cup parmesan
1/2 tsp italian seasoning
2 cups pizza blend cheese, shredded
1/4 tsp garlic powder
1/2 cup pizza sauce
1 cup mozzarella, shredded

Beat together cream cheese and eggs until smooth. Add cream, parmesan cheese and spices.

Spray a 9 inch or larger glass baking dish with oil. Put the 2 cups pizza cheese in dish and pour egg mixture over it. Bake at 375 degrees for 30 minutes or until eggs are set.

Spread on pizza sauce, mozzarella cheese and favorite toppings. Bake until bubbly and browning. Let stand 10 minutes and serve.

Serving size 4
Using all fat free cheeses this is 7-8 points per serving. Adjust up depending on toppings.

Milky Way

1/2 gallon ice cream (fat free)-softened
1/3 cup fat free caramel sundae topping
1 cup fat free cool whip-thawed
1 small box ff/sf choclate instant pudding

Mix all ingredients together until well blended. Freeze to harden.
